What are some good Wordpress and Tumblr alternatives that don’t use AI and are beginner friendly?
It looks like Tumblr at least has a way to opt-out of sharing with third-party services that use AI, but since this has been there it’s unclear if it’ll change with this new announcement.
Not that this is good regardless, but I imagine this pertains to wordpress.com users, and not people/organizations using wordpress to host/develop their own websites on their own servers?

If it doesn’t apply to the .org side, that would be great. But even I’m not sure I’d want to stick with them as a company.
Agree. I have a couple of wordpress websites on my server that I was already considering moving to another cms. Regardless of them implementing this on .com and/or .org, I think long term I’m going to move away from wordpress.
Well, at least on Tumblr that’s only going to affect bringbacktheporn.tumblr.com.

Off the top of my head I think WriteFreely and Plume are what you want but some of the microblogging platforms like Misskey or Pleroma could also work.
WordPress is open source. You can just use it and not host with WordPress.com

Think you should mention that self hosting is okay but you have to pay attention to plugins you use.

I can toggle the opt-out setting from the app, I think it is default to opt-out? Can someone check what their default is? It is down the visibility setting.
Edit: Just remembered that I did update the app today, so you might need to do that first.
