And, unlike lobsters*, they all talk with a hoarse Brooklyn accent.

I always heard this joke as “If you hold a stoat up to your ear, you can hear the sound of your own voice, screaming.”
Ears are not the preferred food of the crab, but they’re quite adaptable.
